needs more salt

We are on the north shore of Kauai for the next week, which still feels unreal after the hellish week of work we had leading up to now. A few weeks ago, I posted a question about food for long plane rides, in preparation for the 11-hour NYC->Honolulu flight. (I’ll be damned if I’ll pay $14 for a shitty club sandwich.) There were tons of amazing suggestions, but in the end I picked these potstickers, with shiitake mushrooms, scallions, and tons of curry powder added to the yellow lentils for variation.

Of course, I was so tired from work that I ended up making them in two parts — I simmered the lentils and sautéed the rehydrated mushrooms and scallions, went down for a nap that accidentally lasted for hours, and then wrapped all 80 dumplings between 2 and 4 in the morning.

Despite all that they turned out very, very well and we snacked on the 36 dumplings I packed into folded paper plates and ziplock bags all flight long with no mess. There were even a few left for us to have for breakfast this morning before going grocery shopping, reheated and served the sambal oelek we found in the fridge. And there are dozens more in the freezer back at home. Worth the sleep loss? Maybe.
