I don’t usually cook for myself—a combination of lack of skill, lack of space, and, most importantly, lack of patience—but last night, being in the presence of NSH and JMM’s blue table inspired me. The meal was simple by their standards, but a modest success by mine: kale tacos (the kale sauteed in onions, olive oil, and garlic while “Bunheads” played on Hulu in the background) with two poached eggs. The eggs were just as I like them—firm on the outside, runny on the inside; if there’s one thing I can cook, it’s eggs—but, perhaps predictably, everything turned out to need much more salt.
