I arrived home dully tired, determined to make dinner from the dumplings we had stored in the freezer. I flopped into bed to start reading the Saltie cookbook, but as soon as I read the phrase “zucchini and carrots with mint” in the introduction, I suddenly became energized. I went to the corner store for ingredients without explaining what I was doing to JMM, then came back and spent and hour and a half prepping roasted vegetables and simmering lima beans with garlic and curry powder to top with a parsley-anchovy puree. I was still stupidly tired at the end of it all, but it was worth it.
