needs more salt

Well, this is a terrible photo of what is maybe my favorite meal ever. Whenever my sisters and I go home, we ask our mom for our various favorite complicated Iranian stews, but we also ask for our favorite quick meal: kabob cooked under the broiler and served with sumac, white rice, and fried eggs. I tried to replicate it at home in Brooklyn and it was almost as good — the kabob could have used more saffron and finely minced onion, and I’ll never be as good as my mom as making Iranian polo, even with the fancy long-grain rice she mails me.
